How to Make the Best Cupcakes

What you will need for the cupcakes;

110g softened butter.

110g golden caster sugar.

2 large eggs.

1/2 tsp vanilla extract.

110g self raising flour.

Pinch of Salt.

 

What you will need for the icing;

150g softened butter.

300g icing sugar.

1 tsp vanilla extract.

3 tsbp milk.

Pinch of Salt.

Food colouring paste (if you want to add some colour).

 

Method for the Cupcakes;

  1. Heat oven to 180C/160C fan, or gas mark 4. While doing this fill your tray with 12 cupcake cases.
  2. Using an electric whisk beat your butter and sugar together untill pale and fluffy then whisk in 2 large eggs, one at a time, scraping down the side of the bowl each time an egg is added.
  3. Add half a tsp vanilla extract, self raising flour and a pinch of salt, whisk untill combined then add the mixture to the cases.
  4. Place in the oven for 15 minutes, untill golden brown and when you stick a skewer through it comes out clean.
  5. Once finsihed place on a baking rack to cool.

Method for the icing;

  1. Whisk butter untill super soft and add in the icing sugar, 1 tsp vanilla extract and pinch of salt.
  2. Whisk together untill smooth, then add your milk and whisk again.
  3. Add in food colouring now if you wish.
  4. Spoon icing onto cupcakes.
